I wanted an easy dinner and something that had some warmth. I am not fully committed to Fall and Winter dinners yet. I have lost some serious love handles this summer and I want to keep that momentum up. I don’t personally feel loading up on heavy winter foods would help that (haha). That being said I do crave comfort food. I don’t have nutritional facts on most of my recipes as they are very much my own, unless I borrow a recipe seen somewhere and change it. What I will say is that I had a group of people to feed other than Pixie and Gramsies, so I was able to cut my portion to one hamburger (no bun) and salad serving. The meat was lean, the vinegar sugar-free. I made sure to drink lots of water. I was full content and had a ton of flavor. It was a very good dinner and I absolutely did not feel over stuffed or like I had too much. Was that my point going into this recipe? Absolutely not. I just think about these things now. I think every choice we make to live better is something that makes us THAT much better.
Black Bean Cilantro Salad
45 ounces Black Beans, Canned — rinsed and drained
1 cup Corn Kernels — rinsed and drained
1/4 cup (each) red green yellow bell pepper — diced
1/4 cup red onion — minced
1/3 cup Olive Oil –evoo
2 tablespoons Fresh Lime Juice
4 tablespoons Red Wine Vinegar
1/4 cup Fresh Cilantro — minced, optional
Salt and pepper — to taste
Rinse chop and mix all the veggies and add to a lovely colorful big bowl. Take Lime, Vinegar, Oil and whisk in a small bowl. Add cilantro stirring around oils. Let sit 15 minutes while you prep the hamburgers. Whisk one final time and pour over veggies turning while you cover everything.
LuLu’s Jalapeno Face Kickers
2 lbs ground beef
6 Jalapeno peppers seeded and finely diced (hello Ron Pompeill chopomatic)
2 tablespoon Worcestershire
2 tablespoon adobo seasoning
2 tablespoon garlic powder
8 slices Canadian Bacon
8 slices Swiss cheese or your preference
Slices of Red Onion (left over from above) and some lettuce tomato or other favorite toppings.
I used my Forman on this so if you have a grill outside god bless ya. I didnt want to fire up “Sally” last night so it was the counter top version. So this is easy mix everything above except the bacon onion and cheese. Make 8 patties.
Lay on the grill 6-8 mins flipping once. Last 3 minutes place onion on final side. This is nice on the Forman because when you close the lid it grills :). Lift place cheese for 1-2 minutes in that process and then serve !
