Brown Butter RiceKrispy Treats
1/4 cup unsalted butter
5 oz mini marshmallows (half a bag)
1/8 t kosher salt
3 cups rice krispies
So here’s a little secret, if you warm butter up. Get it almost to a slight burn but not quite. Pour it over marshmallows and then over krispies… You will have a warm summery flavor that lingers on your lips and tastes like nothing like the treats your mama made. Yep, its fattening. Yep its sugary and sweet and horrible for you. Yep its ADORABLE wrapped in beautiful papers shoved into a little ones Easter Basket !
Grease up an 8×8 square baking pan with butter and set aside. Butter flavored Pam is perfectly acceptable and highly recommended. It makes my life so EASY!@
In a large pot, melt the butter over medium-low heat. It will start to get foamy, and after a while, it will turn golden brown and start to smell nutty. Stir often to scrape off any bits from the bottom. Watch the pot carefully, because brown butter and burnt butter can happen in an instant. Faster than an instant. I am talking you will be dialing 911 faster than spit!
Once you’ve achieved brown butter, remove from heat. Add in marshmallows and stir until melted. Stir in the salt and the cereal and quickly spread the mix into your prepared baking dish. I used a flexible silicone spatula to push into each corner.
Let cool and cut into squares. Makes 9 good sized squares. 2 great big fabulous ones if you feel like sharing with your love.
